Tarragon and Lemon Roasted Chicken

This dish is absolutely delicious! Think perfectly roasted chicken thighs, infused with the bright flavours of fresh tarragon and lemon. Best served with cous cous, rice or mash to soak up the delicious juices!

Ingredients

chicken thigh, fennel, liquid chicken stock, cooking white wine, fresh lemon, olive oil, peeled garlic cloves, tarragon, salt, ground pepper, jasmine rice

Preparation and storage notes

Refrigerate up to 3 days. To Reheat, if frozen, defrost on medium heat for 4 minutes then cook for 2 mins on high in microwave, if thawed cook for 3 minutes. Heat for an additional 30 seconds at a time as needed until cooked to your preferred temperature for eating. Loosen with water if it seems a little thick.
