Caponata is such a great dish - it is also called ratatouille. You can serve it as a side or main meal or it makes a great lunch for work. You can serve it cold, room temperature or hot! I also love it tossed through pasta or on crispy toast.

Preparation and storage notes
Serve cold or room temperature or reheat in microwave. Keep refrigerated and use within 4 days. Can be frozen.
