Twice Baked Pumpkin with Seed Gremolata

Delicious hot or cold, as a main or as a side! Simply delicious! We cook the pumpkin, stuff it with a mixture of lentils, feta (optional), seeds, herbs and zesty lemon and top with pomegranate and a maple tahini dressing. Please advise if require vegan as feta can be provided separately.
