Aromatic Salmon Curry with Lemongrass, Coconut & Kaffir Lime

An aromatic fish curry made with salmon and flavoured with lemongrass and kaffir lime leaves. Serve with basmati rice and fresh coriander.

Ingredients
Salmon fillet, Coconut milk, Butternut pumpkin, Lime, Extra virgin olive oil, Lemongrass, Rapaura sugar, Garlic, Ginger, Turmeric, Fresh coriander, GF Fish sauce, Kaffir lime leaves.
Preparation and storage notes
Transfer to heat proof dish and warm in the oven for 20 mins at 150C until warm, or reheat in the microwave. Serve with basmati rice, steamed greens and a fresh lime wedge.
