Snacks
Creamy tuna pate is great to have in the fridge for an easy lunch. Spread onto crusty bread with cucumber or enjoy in a wrap. Also great as a pre dinner nibble served with crackers.
Pate spread on crackers or rye bread is such a delicious, easy lunch. I like to serve along side some pickled veg. Of course, it's also perfect for pre dinner nibbles. Nutrient dense and full of healthy fats, chicken liver pate is a a good one to have on hand in the fridge. Small approx 120g Large approx 240g
Soups & Starters
This soup is by the wonderful Yotam Ottolenghi. Red lentils are cooked with onions, garlic, ginger, curry and tomatoes, finished with coconut milk and a squeeze of lime.
A creamy vegan roast cauliflower soup. Arrives with a macadamia 'parmesan' - made with macadamias, sea salt and nutritional yeast.
Vegetarian mains
A vegan bolognese sauce made from lentils, tomatoes, herbs and red wine. *This is just the sauce, ready for you to serve with your choice of pasta, zucchini noodles or parmesan polenta.
An aromatic vegetarian curry made with tofu and flavoured with lemongrass and kaffir lime leaves. Serve with basmati rice and fresh coriander.
A light risotto made with vegetable broth, asparagus, broad beans, lemon zest and parmesan
Meat mains
A classic beef stew made with potatoes, carrots, mushrooms, bacon and red wine. Serve with parmesan polenta or creamy mash and steamed greens.
Serve for lunch or a light dinner with a simple salad.
Slowly cooked chicken, Mexican spices, tomato and lime. Serve with soft tortillas with all the trimmings or simply with some steamed rice and a salad.
Salads and Vegetables
This recipe is from Sophie Hansen's book 'What can I bring?' She says it travels well and doesn't mind being left out at room temperature for some time. In her words it's "bright, crunchy. packed with big flavours and very healthy..." Sounds good to me!
Pickled cabbage & ginger are tossed with freshly shredded cabbage and sprinkled with toasted sesame seeds. This salad is delicious to serve with slow cooked meats, curries and dhal. It is crunchy, sweet and sour.
Broccoli florets are roasted in olive oil and sea salt then combined with blanched green beans for some freshness! Served with a small pot of whipped tahini to dip or pour over. Serve cold or reheat greens.
Sides
This creamy polenta made with parmesan goes nicely with slow cooked meat dishes.
A flavoursome side dish when you want a little more than plain rice. Goes well with meat or lentil dishes, or enjoy alone with a green salad for lunch.

Pantry and condiments
An sauce to dollop on tacos, on a grazing salad plate or to dip with crunchy veg.
Serve as a condiment to cold meats, salads, in tacos or grazing plates.
Buckwheat groats, oats, shredded coconut and seeds are toasted in coconut oil, maple syrup, cinnamon and a little cardamom.

An old favourite... pumpkin soup! Serve with a dollop of creme fraiche, cracked pepper and a slice of buttered sourdough

A nutrient dense soup full of protein, minerals and collagen from the ham. It's slow cooked in chicken broth and is loaded with vegetables. So nourishing, delicious and easy to digest. Medium serves two as a starter or light lunch, large serves four as a starter or light lunch
A delightful combination of prunes, capers, green olives and fresh herbs. Serve with brown rice & ghee, couscous, quinoa or a sweet potato puree and simple green salad or steamed greens.
These are great for kids dinner, serve with pasta and coat with the sauce. Also perfect as a lunch with salad. They freeze well too.
A rich, hearty beef stew slowly cooked so the meat is lovely and tender. Cooked with broth and added veggies this old fashioned favourite is also full of goodness. Serve with cauliflower mash, polenta or mashed potatoes. A dollop of sauerkraut is also delicious!
A flavoursome, mild beef korma made with home made korma curry paste. Serve with steamed basmati rice, raita and raw tomato relish
