Eggplant with Beans with Chilli Pesto

Another Ottolenghi recipe that we have taken and twisted to suit what we have in our pantry this week. Eggplant is cooked with butter beans, kidney beans and chick peas to which we add a little chilli pesto. This is a wonderful vegetarian option or side dish.
