Brown Butter Butter Beans with Pesto

Yotam Ottolenghi is one of my favourite chef's. I am always inspired by his imaginative flavour combinations and food made with absolute love. This is a simple vegetarian option that works well with our repertoire. Butter beans are roasted with olive oil, parmesan, pesto, parsley, shallots and lemon zest to create a magical creamy, crunchy dish. Serve with fish or a salad.
