Moroccan Chicken Tagine with Vegetables

Our Lamb Tagine is a staff favourite. I have been making it since the beginning of my adventure at C Si Bon. This week we had some extra chicken so we thought we would do something different. We started by smothering chicken thighs with paprika, cumin, cinnamon and turmeric and backing in the oven until tender. We then added these to a broth of chicken with carrots, potatoes, craisins, chick peas, crushed tomatoes, a touch of honey and seasoning. We cooked until everything was fall apart and tender. I would serve this with our Turmeric Rice to make an authentic Moroccan feast.
