Lemon & Coconut Syrup Cake

I love lemons and life has certainly given me plenty of them so there's always room to make dessert! This is an absolute favourite cake I make for the girls all the time. Maybe I love it more than them? I make a sugar syrup with infused lemon and then bake a cake using fresh lemon zest and coconut. Once it's cooked I pour the lemon syrup over the top while it's still hot so that it soaks up all the deliciousness. Serve with tea or after dinner with some clotted cream.
