Smoked Prawn Risotto

I got my hands on some incredible prawns. I visited San Sebastián many times in my younger life as my uncle and aunt lived nearby. One of things that I loved was the way they made their prawn dishes for pinchos. I have adapted this for our risotto. Prawns are cooked with olive oil, garlic and paprika and then smoked in our smoker. I then added them to a beautiful risotto. It's a subtle, Mediterranean flavour full of sunshine.
