Vichyssoise Fun Facts: Vichyssoise (vee-shee-SWAHZ) is a soup made with puréed leeks, onions, potatoes, cream, and chicken stock. Vichyssoise was invented in America in 1917 and named after the French town of Vichy—long before Vichy would become the seat of France's Nazi collaborationist government. Today, it is one of my favourite soups and I like it served hot in Winter. Creamy, rich and packed full of all of my favourite things. This week it's on!
