Risotto with Lemon, Chicken, Artichokes & Herbs de Provence

I've been wanting to do a chicken risotto dish for a while. So this recipe is using all those fresh lemons in season as well as another favourite, artichoke. I have roasted chicken thighs with Herbes de Provence, olive oil, salt and pepper. I have then sweated down brown onions with garlic, more herbs and added white wine, chicken stock, artichokes, fresh lemon zest and juice and risotto. The risotto is plump and soaks up all of the flavours. I then stir the chicken through the risotto and artichoke mix. Simply heat and eat. Perhaps match with a cheesy, herb and garlic fusette!
