Grilled Zucchini with Cannellini Beans, Artichokes & Tarragon

This creamy beautiful dish is a wonderfully light accompaniment to any grilled meats such as fish, chicken or pork. You can also use as a vegetarian dish and serve with some crusty bread. I have cooked garlic, leeks and dill until slightly golden, then I added some white wine, lemon juice and vegetable stock and added the cannellini beans and whole artichoke hearts. I stir this until a creamy consistency and then added the grilled zucchini. You could add parmesan cheese or burrata!
