Mediterranean Salmon

Salmon is a versatile fish that can hold it's own when combined with robust flavours. I have made a beautiful Mediterranean style sauce in honour of every instagram post of Greece, Italy and France that is on my feed at the moment. I have baked the fish with olives, capers, white wine, dill, Italian crushed tomatoes, salt and pepper to create a light and flavoursome meal. This definitely needs to go with a potato gratin and some green beans.
