A sweet and sour accompaniment of cucumber, pineapple, shallot, chilli and ginger to cut through the richness of curries.

Ingredients
Cucumber, Pineapple, Rice Vinegar, Sugar - caster, Shallots - red, Ginger, Chilli - birdseye, Coriander Leaf.
Preparation and storage notes
Add the dressing to the other ingredients. The dressing can be added just before serving for a fresher taste, or can be added an hour or two in advance to allow the flavours to develop.
