ABOUT BLUEBOY THAI

Blueboy Thai is a celebration of authentic Thai flavour that remains true to its origin. Developed through years of experience in some of Melbourne's best restaurants and inspired by frequent trips to Thailand, BlueBoy Thai seeks to recreate the life and elegance that is inherent in Thai cuisine.

Our menu digresses from the sometimes lacklustre but familiar flavours of local Thai takeaway and presents vibrant, complex and refined flavours that evoke memories of place. Spices are tailored to the ingredients, rather than a 'one size fits all' approach and our pastes and sauces are made from scratch.

Regional, lesser known dishes are championed, varied combinations are created to provide an alternative to the everyday dishes that Australians are accustomed to - green curry doesn't always have to go with chicken.

A FEW WORDS FROM THE CHEF

My older brother first taught me to cook when I was about 19 years old. I was studying animation and graphic design at the time - the dish was a chicken stir-fry made with bottled sweet chilli sauce. Cooking remained a mainstay in my life, throughout 10+ years of working in animation and design. My interest in Asian flavours developed into a passion for Thai food and was the catalyst for changing careers and starting a chef's apprenticeship. I was fortunate enough to serve the bulk of my apprenticeship at Coda, ezard and Pope Joan, returning to a lead role at Coda after completing my apprenticeship. This experience, multiple trips to Thailand and in-depth exploration of Thai flavours is the foundation of what BlueBoy Thai is about.

HOW IT WORKS
BlueBoy curates a small menu consisting of starters, sides and mains to provide a true experience of Thai cuisine that can be savoured in your own home. Menus are currently under development for intermittent delivery runs, bespoke catering and small dinner events.
