Red Curry of Pumpkin & Water Spinach (VEGAN)
Rich and peppery red curry of pumpkin and water spinach. Salty, smoky, slightly sweet and sour with citrus notes from makrut lime leaves and juice.

Ingredients
Pumpkin - Jap, Soy Sauce (GF), Eggplant, Homemade Coconut Cream, Kang Kong, Shallots - red, Tamarind paste, Garlic, Dried Chilli, Lemongrass, Galangal, Palm sugar, Peppercorn, Salt, Kaffir lime leaves.
Preparation and storage notes
Heat contents in microwave or pot for 1-2 minutes or until hot through. Top with shredded kaffir lime leaf and adjust seasoning with lime.
