Laap Gai (Northern Thai style chicken laap)
A northern style laap made from hand-cut chicken maryland, marinated and cooked in a spiced, aromatic paste with chilli and garlic. Served alongside a selection of herbs and wombok. Chilli heat - mild.

Ingredients
Chicken leg (boneless), Wombok, Lemongrass, Shallots - red, Ginger, Garlic, Spring Onion, Vietnamese mint, Coriander seed, Shrimp paste, Dried Chilli, Lemon Balm, Coriander Leaf, Sichuan Pepper.
Preparation and storage notes
Bring to room temperature before eating, mix with lemongrass, spring onion and lime leaf. Garnish with crispy shallot and garlic.
