Half Serve Mediterranean Apricot Chicken

REQUEST GF and brown rice if preferred. Old-fashioned apricot chicken with a farmhouse twist. Our chicken Maryland fillets (boneless & skin on) are delicately roasted in the oven surrounded by olives, garlic, apricots, fresh thyme, and bay leaf from the Farmhouse Garden. Combined with the juices of the chicken this makes a delectable sauce, which soaks into the nutty barley. Served atop a bed of Baby Spinach. Small: Approx 250-300g Keep Refrigerated. Microwave for best results on high until hot, allow to sit 2 mins before serving. Oven, pre-heat to 160c, remove tray lid, heat 10 to 20 min until hot. Cover with foil if the contents are drying out.

Preparation and storage notes

Keep Refrigerated.
For best results, use microwave: crack lid and re-heat on high until steaming hot. Let stand 2 mins before serving. Can use oven, preheat 160c and warm for 10-20mins.
