Braised Boar

Davide strikes again with his love of game meats - on the specials menu in the restaurant (and decidedly too good not to share with you at home!); Braised Boar with Polenta. The neck and shoulder of this beautiful wild boar is braised at a high heat with aromats, herbs, vegetables and white wine to bring a moist and moreish braised boar to you. It's be remiss of us to serve it with anything except polenta; it's the Italian way of life. We recommend having some vegetables or a light salad on the side to break up the richness of the dish; along with a good glass of Brunello di Montalcino, Barolo, or even a Grenache. Serves 2 people.

Carrot, Celery, Onion, White wine, White Pepper, Coriander Seed, Wild Boar neck, Wild Boar Shoulder, Garlic, Cornflour (Wheat), Olive oil, Salt, Thyme, Rosemary, Sage, Cinnamon, Anise star, Pepper, Chocolate (Milk), Bay Leaves, Juniper Berries (Sulphites), Cacao Nibs, Cornmeal (polenta), raw

Preparation and storage notes

Place water in pot with strainer/utensils at the bottom, to prevent bag touching the pot. Place bag into pot, & over low heat, slowly bring water to boil, then turn off heat. Wait 2 mins, carefully remove, and serve.
