KITCHARI, with seasonal vegetables
An Ayurvedic dish that aids in healing, is easy to digest, tasty and perfect for postpartum, those that have been unwell or those that just love good food and are health and gut conscious. Seasonal gut friendly vegetables adorne this creamy Dahl like dish. Moong Dal and brown basmati rice are soaked for 48 hrs then cooked to a perfect soft paste with fennel, ginger, turmeric and coconut oil.
Ingredients
Moong dal, Rice, basmati, raw, Carrot, Broccoli, Zucchini, Green beans, Cocount oil, Baby spinach, Coriander, seed, whole, Fennel seeds, Fenugreek leaves, Mustard seeds, Ginger.
Preparation and storage notes
In a Hot pan, add the Kitchari and 1 Cup of Vegetable stock, heat for 5-10 minutes
