Chinese chicken congee with shitake mushrooms
This is a all time favorite soup of mine , is comfort in a bowl.Its the Asian version of Chicken soup.. Loaded with ginger and pandan and served with soy , chilli and fried shallots. Great for those who are recovering from being unwell and as a general health tonic for the body.

Ingredients
Chicken stock, Chicken thighs, Rice, Brown onion, Ginger, Sambal oelek, Spring onion, Sesame oil, Vegetable oil, Soy sauce, Shitake mushrooms, Fried shallots.
Preparation and storage notes
Defrost in fridge and heat in pan or microwave for 5- 8 min to 75 degrees. Add water or stock to bring to a porridge like consistency.
