Soy Poached Chicken w/Lemongrass Rice & Edamame
We absolutely LOVE this dish!! Deep umami flavours of chicken thigh poached in fragrant lime leaf, ginger, coriander root and tamari, mixed with sweet baked red onion wedges. Mixed with the lightness of edamame (soy) beans and finished with coriander, red chilli and spring onion greens. Served with lemongrass infused steamed brown rice, it's hearty... but light, all at the same time.
