A tasty combination of pumpkin, sweet potatoes, parsnips, cauliflower, celeriac, beetroot, carrots and red onions. Lifted with the addition of feta, spice and crunchy smoked almonds to make it something special. Delicious for lunch the next day as well

Preparation and storage notes
Keep refrigerated and use within 5 days. Reheat oven or in microwave until hot, or eat cold
