Tamarind and Wild Ginger Beef Curry

This is a luxe Thai curry that is a little sweet, a little sour and just the right dash of spicy. I will use scotch fillet Australian beef, seared and poached in the rich broth that has the tang of tamarind and a hint of cassia. One steak serves two people sliced.
