This fresh and crunchy Vietnamese coleslaw is full of the freshest cabbage, cucumber, carrot and topped with lashings of fresh mint, coriander and Thai basil and toasted shallots with a refreshing rice vinegar dressing. A perfect accompaniment to Lemongrass Roast Chicken or a great stand alone lunch.
