Japanese-style Negi Miso Glazed Eggplant with Sesame Seeds (Vegan)
This is my ultimate vegetarian comfort food served with a simple bowl of organic brown rice and some nori seaweed. The negi miso sauce is made with a white miso paste, sauted leek, sake and mirin. I drizzle this sauce on all my grilled vegetables when my immune system needs a pick me up!

Ingredients
Eggplant, Negi Miso Sauce (Sake, White miso, sugar, soy sauce gf, leek, sesame oil), Toasted sesame seed, fresh ginger, Salt.
Preparation and storage notes
Place eggplant on a metal tray in a hot oven 190 degrees for 10 minutes. Eat with rice.
