Pumpkin soup is a winter classic. In this version we roast the pumpkin first to draw out the sweetness and add depth of flavour. We finish the soup with fresh oregano for extra burst of flavour and you can sprinkle over the cashew Parmesan when serving.

Ingredients
Vegetable stock, Butternut pumpkin, Chickpeas, Celery, Brown onion, Carrots, Garlic, Cashew parmesan, Oregano Fresh, Nutmeg ground.
Preparation and storage notes
Thaw fully in bag. Place in microwave for 2-3 minutes or until hot through. Serve into bowl and sprinkle over parmesan.
