Balsamic roasted beetroot, whipped feta, pesto, Parmesan, olive oil. This is our favourite beetroot salad to date.

Ingredients
Beetroot, Extra virgin olive oil, Meredith chevre, Thickened cream, Lemon, Parmesan, Pesto.
Preparation and storage notes
Mix beetroot with lemon dressing and a little salt and pepper. To assemble, spread the feta on the plate, place dressed beetroot on top, dot with pesto and garnish with Parmesan.
