Vegetarian Fried Rice

A great weeknight dinner…all of the traditional flavours of ginger, soy, shao hsing and sesame come together with perfectly cooked jasmine rice, capsicum, firm tofu and greens. The work has been done, the rice cooked, cooled and recooked, the flavours mixed, the egg omelette shredded, the vegetables seared and all bought together for you to enjoy without the pots, pans, chopping and waste of leftover ingredients. I like to serve it with a side of bok choy and an extra fried egg. Enjoy!
