Coconut & Turmeric Dhal
This comforting dhal is packed full of all the good stuff; ginger, garlic, turmeric and chilli, giving the immune system a much needed boost as we enter the colder months. Serve with a jammy egg, and a side of roti or rice.
Ingredients
Extra Virgin Olive Oil, Lentil, Ginger, Chilli (red), Garlic, Salt, Star Anise, Cinnamon, Coriander seed, Cardamom, Mustard Seed, Cumin Seeds, Turmeric (ground), Coconut milk, Black Pepper, Curry leaf, Tomato, Eggplant.
Preparation and storage notes
Empty contents into a medium saucepan. Bring to a gentle simmer over a low heat and cook for 20-25 minutes.
