Thai Massaman Beef Curry

Is it Thai or it is Indian? Actually, the Massaman curry is of Indian Heritage but is then combined with more traditionally Thai flavours such as lime, lemongrass, galangal and coconut cream. We slow cook the beef in a lemongrass broth until it is fall apart tender, then make the sweet, salty and sour curry sauce that is often licked off the plates here! You can have this with potatoes and rice or go full keto using swedes in the curry, on a bed of coriander cauliflower rice. You choose - just let us know in the comments! :-)

Preparation and storage notes

Remove the lid before heating. If defrosted microwave for1 min, if frozen microwave for 2 mins. Stir and repeat for 30 seconds at time until heated to your desired temperature. Add a little water to loosen if needed.
