Coconut Chickpea Curry

This is a relatively simple curry that gives more of a flavour bomb than you would expect! Healthy and filling because of the chickpeas, spicy from the paprika, cumin and then with the addition of cayenne pepper for a bit of a kick. Definitely needs the yoghurt and a squeeze of lime juice to round it out. Served on a bed of rice to make it a full meal.

Preparation and storage notes

Microwave uncovered on medium power for 2–4 minutes if fresh, or 6–8 minutes if frozen, until heated through. Let stand for 1 minute before serving. Add a little water to the curry to loosen if needed.
