Sweet but lean Pork tenderloin, wrapped in prosciutto, then roasted. The prosciutto keeps it juicy an adds a salty touch to the meat. Served with mashed sweet potato as a tasty combo (which is also lower carb than usual mash!) and side of steamed greens.

Preparation and storage notes

Remove the lid before heating. If defrosted microwave for 1 min, if frozen microwave for 2 mins. Stir and repeat for 30 seconds at time until heated to your desired temperature.
