Cracked wheat and freekah salad with barberry dressing

Bright, nutty and full of texture — this is the kind of grain salad that earns its place at the centre of the table. We cook cracked wheat and freekeh the slow, proper way: gently sautéed with shallot, celery and butter, then baked until fluffy and tender. Once cooled, the grains are folded through with roasted almonds, heaps of fresh mint and parsley, and finely chopped preserved lemon for that unmistakable citrus lift. The hero, though, is the barberry dressing. Tart, jewel-like barberries are simmered to release their ruby-red syrup, whisked with olive oil and lemon to create a zingy, aromatic dressing that ties everything together.
