Thai Green Chicken Curry and steamed Rice
A good Thai Green Chicken Curry is an aromatic delight. It is much thinner than a red curry, with the texture from the crunchy Vegetables. Add a handful of Thai basil and a few bruised kaffir lime leaves for fragrance, and you have yourself one fantastic dish. And you can always add extra chili to kick up the heat! Chicken thigh, Zucchini, Coconut cream, Eggplant, Chicken stock, Coconut milk, Fresh coriander, Lemongrass, Fish sauce, Coconut oil, Green birds eye chilli, Red shallots, Thai basil, Garlic, Galangal, Kaffir lime rind, Palm sugar, Shrimp paste, Fresh turmeric, White pepper, Coriander seed, Kaffir lime leaves, Cumin.
Preparation and storage notes
For best results, warm gently in a saucepan on your stove top. Serve with steamed jasmine or basmati rice.
