Khao Soi Thai Chicken Curry
A full flavoured and spicy northern Thai yellow chicken curry served on the bone. We make our own curry paste, using gapi (shrimp paste) and smokey dried chilis, galangal and lemongrass, with a few dried spices. We think this is perfect with egg noodles but also rice and roti would work.

Ingredients

Chicken Maryland, Coconut Cream, Chicken stock, Shallots, Red curry paste, Ginger, Vegetable oil, Garlic peeled, Lemon juice, Sugar, Shrimp paste, Fish sauce, Dried chilli, Turmeric, ground, Curry powder.

Preparation and storage notes

Warm gently on stove or in microwave until hot, serve with egg noodles or steamed rice
