Chicken Leek Saffron Lemon and Barley Soup
This comforting, flavoursome and wholesome soup is wonderful for a mid week pick me up. Whole chicken is poached to make a rich and satisfying broth. Leeks and carrots are added with saffron, pearl barley and tuscan kale to round out this elegant but substantial soup.
