Fagioli con le cotiche is a rich stew made of beans and pork skins I have taken our Hill Billie Hogs pork simmered with lots of veg simmered, herbs and pinto beans and some smoky speck to make a hearty chunky soup.

Pork stock, Tinned tomato, Hillbillie Hog Pork skin, Carrot, Tomato paste, Onion brown, Borlotti beans, Speck, Celery, Leek, Garlic, Himalayan salt, Light olive oil, Oregano dried, Black pepper, Rosemary

Preparation and storage notes

Place in a medium pot bring to a simmer for 15 minutes until hot serve with extra parmesan and favorite bread on the side.
