Yellow glow bowl
Yellow split peas cooked with mild curry and creamy coconut served with quinoa, spinach, roasted sweet potato, tomato and cucumber finish with a drizzle of coriander and coconut yoghurt dressing.

Preparation and storage notes
Place yellow lentil in medium pot bring to a simmer for 10-15 minutes, you can warm quinoa a sweet potato in microwave 3-5minutes if you like or serve as is with salad and lime coconut yoghurt.
