Pork Congee
Hill Billie Hogs pasture raised pork slow cooked meat stock using trotters and head, wasting nothing but extracting all gelatinous goodness into our stock which is then simmered with ginger and rice. it's easy to digest and a true comfort food I recommend topping with poached egg for a truly satisfying meal.
Ingredients
Hilbillie Pork, Sushi rice, Jasmine rice, Carrot, Ginger fresh, Onion brown, Celery, Parsley, continental, Himalayan salt, White pepper.
Preparation and storage notes
Place in medium pot bring to a simmer with 1/2 cup of water, bring to simmer over a medium heat stirring occasionally to avoid sticking. Serve topped with a peached egg a dash of soy sauce and sesame oil.
