Chicken and Sweetcorn Congee

Rice simmered in a ginger and chicken stock with sweet corn, and chicken thigh. Topped with steamed chicken breast, furikake and spring onion. Serve as is or with a poached egg on top it is gentle on digestion whilst fueling you up for hours.

Ingredients
Chicken stock, Chicken Thigh, Chicken breast, Corn, frozen, Sushi rice, Jasmine rice, Ginger, Coconut oil, Fruikake, Himalayan salt, Spring onion, White pepper.
Preparation and storage notes
Defrost, Place in a pre-heated 180 oven for 20mins, if rice is too thick loosen with a splash of hot water you want porridge consistency. or you can microwave for 8-10 minutes. also very nice served with a poached egg.
