Preparation and storage notes

Toss pesto with rocket, drain some of the marinade from beetroot, layer a handful rocket/pesto mix on platter scatter beetroot over leaves add more rocket the remaining beetroot and build up. (you don't want to toss this one or it will all turn pink from the beets layering works best)
