About us

Our chocolate journey started in 2006 in Italy, while working in the town chocolate shop, learning how to temper chocolate. Since then the passion kept growing. After having worked in Paris, New York City and Hong Kong we chose Melbourne as our home to start experimenting with the first stone grinder in 2019.

The stone grinder is an essential machine in the chocolate making process: it is made out of two heavy granite rolling wheels and a rotating drum with a granite stone bottom.

So simple and so effective.

For the first time in years we felt like we were actually in control of Chocolate and not the other way around; opening a bag of ready made delicious chocolate is always exciting but there is something extra-wild in creating your own, sourcing the Cocoa Beans, adjusting the roasting temperatures and conching time are all part of the process and in each one of these you, as the maker, have to choose your own style.

That is what make our chocolate unique.

We learned, honoured and forgot traditions but we are not tied to them.

In our vocabulary the word "Tradition" has been replaced by the word "Knowledge"; breaking down each singular information included into a traditional recipe and being able to combine it in a modern way.
