Crispy, tender, and seriously addictive. These bite-sized chicken morsels are marinated in rich buttermilk for extra juiciness, then tumbled in our family’s secret herb and spice blend—a subtle nod to the Colonel, but with Glen’s own twist. Coated for crunch and fried till golden, they’re gluten-free and full of flavour. Perfect for snacking, sharing, or sneaking before dinner even starts.

I've probably made a million litres of chicken broth, and it's probably better than yours. It's the base of almost everything I do, and I carry a litre on me at all times in case I run into someone making soup in my travels. "Bone broth is highly nutritious. It contains bone-strengthening minerals such as calcium, magnesium, potassium and phosphorus. Bone broth is also found to contain natural glucosamine and chondroitin from animal's connective tissues, which are both essential factors to maintain healthy joints. Bone broth is also a good source of collagen, which is found to have anti-aging capacity in diminishing fine lines and promote plumpness for our skin. The marrow from the bones contain essential amino acids which can help fight inflammation to prevent chronic diseases." said someone on the internet. Get some and drink it for better gut health or store it in the freezer and use it in sauces and soups.

Description: There are two kinds of people in this world: those who believe gravy is a condiment, and those who understand that gravy is, in fact, the whole point and everything else is just a vehicle for getting it to your face. If you're in the second camp — and honestly, why would you be anywhere else — this one's for you. Beautifully thinnish-sliced roast beef, surrounded by vegetables roasted to the kind of golden perfection that makes you briefly reconsider your relationship with pumpkin (it's been there all along, you just weren't paying attention). Weekly rotating veg — potatoes, pumpkin, carrot, zucchini — plus steamed peas, because the world could always do with a little more peas and no one can convince me otherwise. Tied together with our homemade gravy, which is essentially liquid gold and the thing I would save in a house fire, just ahead of the children. (They're faster than gravy. They'd be fine.) 🥩

Trevors Beef Bangers a thing to behold and even better to be eating them. Made with natural casing and the perfect ratio of fat, it's all I can do to not be outshone by our local butcher. Paired with a classic onion gravy, and silky smooth mash.

Slow-cooked pork ribs rubbed with smoked paprika, garlic and sherry vinegar until the meat falls off the bone, then finished with a sticky glaze. Served with a rich roasted capsicum and almond romesco, charred corn and zingy lemon potatoes. Smoky, savoury and full of Spanish flavour.

Chicken thighs marinated in satay spices (not spicy ones), grilled, and sensually slathered and simmered in rich peanut and coconut gravy. It's a sexy, nutty, rich and dreamy dish - if it helps you can imagine Nigella cooking it. This could be served with flatbreads, or one could go loopy like that one restaurant I went to one time and serve it with fettuccine (just don't tell the Italians!). It is, however, served appropriately with perfectly cooked rice.
From $15.00
Local trout from Baw Baw and wilted baby spinach with a brown rice risotto made with rocket and basil. Food probably doesn't get better than this... ...oh, but wait.. it does!! The cherry on top of this is a slow-roasted vine-ripened tomato bringing a sharp concentrated tomato flavour that balances this meal. You can eat this dish hot or cold, I prefer mine somewhere in the middle!

Mexican Bean and Cheese Enchiladas – because sometimes you just need melted cheese to solve life's problems, and if that cheese happens to be draped over corn tortillas stuffed with perfectly seasoned refried beans, even better. We're talking proper enchilada sauce, more cheese on top (obviously), all baked until it's bubbling and gorgeous. Comes with Mexican rice and a dollop of sour cream, because balance. Vegetarian, freezer-friendly, and the kind of meal that makes you feel like you've got your life together even when you absolutely don't. Also pairs excellently with avoiding whatever you're supposed to be doing instead.

Locally grown mushrooms, tofu in a Canonese-inspired black-bean sauce. It's light and nourishing and perfect for that, it's-too-hot-to-think-weather.

Love roast beef but rather it in a sandwich or with different sides? Well this is the one for you! Perfectly roasted and sliced. Not served with gravy, as that's not everyones cup of tea.... or bonox if you will. But you can order that separately also. It's like a build-your-own-adventure!

Sliced, seasoned and grilled to perfection, ready to add to a side to turn it in to a meal, or add to a vegetarian meal!
From $8.00
Vegetarian meals are soooooo appealing, because the vegetable is the hero so the Chef HAS to make it good. BETTER than if it were in a meat dish. But sometimes you just don't feel satisfied unless there's meat on the plate! So hence, the best way to eat - order vegetarian, add a side of meat! Nailed it.

Toms spuds are a hill's legend, like the man himself they are a little rough ropund the edges which makes them great for roasting. They are a combination of Royal Blues, Golden Creams, and Gippsland Gold with one Mystery Spud that is like but definitely not Sebago and was planted so long ago that he's actually forgotten the name of it. If you like them grab a bag next time you see him at the local farmers markets.
From $9.00
Frankly I'd be surprised if anyone ordered this but disappointed if no-one does.. slow braised leeks make a creamy sweet oniony base perfect for the sharp pop and tang of the dressing. Medium size serves 2 as a aside or one as a light main.

Its a classic tale of humble mash meets butter but.... plot twist!! This butter has lead a life of fear and resentment burnt by past lovers and friends.

I remember the first time I had this combination of salty, crunchy goodness. Do you? You will.. Chargrilled asparagus with whipped goats cheese and a sprinkle of toasted almonds.

RIght, so here's today's lesson, there are two basic potato salads, mayo-based ones rich and creamy, like Americans, and sour and enigmatic, like the Austrians. This one is the latter. Baby potatoes tossed through a mustardy viniagrette with red onion and parsley. You'll love it cold on a hot day, and you can even eat it warm if the weather takes a turn, but be quick, because it's Melbourne and it'll probably turn back.
From $8.00
It's summer-time at your dinner table tonight! Red Peppers, still firm but with that lovely deep flavour that comes from a quick char and then roasting in the oven! A Spanish-y smokey vinaigrette that adds tang and sweetness, and some toasted almonds to bring a little texture to the party.
