Beautifully thinnish-sliced roast beef, surrounded by vegetables roasted to the kind of golden perfection that makes you briefly reconsider your relationship with pumpkin (it's been there all along, you just weren't paying attention). Weekly rotating veg — potatoes, pumpkin, carrot, zucchini — plus steamed peas, because the world could always do with a little more peas and no one can convince me otherwise. Preparation and storage notes

Oven at 170° for 15 mins, loosely covered in foil — the beef stays tender, the veg gets its second wind, and the gravy does what gravy was always destined to do. (Alternativelty) microwave: 2 x 2 minute blasts.
