proper spuds with caramelised onions that I personally babysat over low heat until they turned into sweet, jammy perfection. No shortcuts here, just me, a pan, and approximately forty-five minutes of my life I'll never get back (but honestly, worth it). Then we char the corn because apparently I can't leave vegetables alone without setting them slightly on fire first. It adds that smoky-sweet thing that makes you reach for seconds.

This meal used to be called "Smashed Zucchini with Brown Rice", which unsurprisingly never got many orders, despite being one of Sophie's favourite meals. In reality it is purposefully over-cooked zucchini with a creamy soft mouth feel - not mashed as previously inferred, doused with the freshness of herbed sour cream, served on a bed of brown rice, and topped with toasted PINE NUTS which are sooooo delicious, and can be eaten hot or cold. Yummo!! Now with the addition of chicken in the title to attract more interest, but still available without for the purists.
