Kale and cashew pesto with a heavy-handed slosh of Virgin Olive Oil tossed through oven-roasted vegetables and some penne—not heaps of dry penne, just enough to provide some weight to the dish. Balance is the key to the perfect pasta, and love is the key to the perfect meal. I have both. Nb our vegan option has the pecorino swapped w nutritional yeast (which is waaaaayyyy better than it sound!!)

Microwave on high for 3–4 minutes LID OFF, depending on your microwave’s mood.
