Honey Mustard Roast Vegetables

Sweet potato, pumpkin, red onions, carrots, capsicum and garlic are roasted in olive oil then glazed with honey, butter and mustard.

Ingredients
Capsicum, Red onion, Sweet potato, Honey mustard glaze (Unsalted butter, Honey, Whole grain mustard, Tamari, Ginger), Carrot, Butternut pumpkin.
Preparation and storage notes
Preheat oven to 150C. Place foil tray into the oven and reheat for 20 mins or until warm. Alternatively serve cold with some fresh rocket for a roast vegetable salad.
