Rolled Turkey Breast with Apricot & Pinenuts
Turkey breast is stuffed with a dried apricot and pinenut stuffing and rolled and roasted. Easy to carve and great to have for leftovers! Serve cold or reheat and serve with Christmas side dished. 1kg boneless turkey breast to serve 4-6 people 2kg boneless turkey breast to serve approx 8-10 people with sides.
Ingredients
Turkey, Apricot & Pinenut Stuffing (Extra virgin olive oil, Onion, Panko Breadcrumbs, Chicken stock, White wine, Pine nuts, Dried apricot, Celery, Unsalted butter, Egg, Sage, Thyme), Sea salt, Unsalted butter, Brown sugar, Black pepper.
Preparation and storage notes
To serve cold, simply slice and serve. To warm, remove from plastic and transfer to an oven dish. Cover and reheat in a preheated 150C oven until warm. Serve with extra apricot and pinenut stuffing and Christmas sides.
